Sources of allergens in finished food products can be from raw materials, cross contamination from other products made on the same equipment, or transferred from elsewhere in the manufacturing plant. The ability to test at all levels, both raw and finished goods as well as the plant environment, is an important tool in prevention of contaminated product.

Previously, stesting for allergens has been either too complicated or too expensive to do in house. However with the new range of allergen testing kits from Romer Labs it is now possible for all manufacturers to perform their own testing on site. The tests are rapid, cost effective, easy to use, require very little equipment or set up and are suitable for both very low and very large volume testing. The range currently includes tests for the detection of peanut, gluten, milk, tree nuts, egg and soy.
